Millet Crackers

Millet Crackers

1 1/2 C millet
1/4 C flaxseeds
2-2 1/4 C whole wheat or spelt flour
2 tsp. baking powder
1/4 C melter butter
1 C water with 2 T white vinegar added

Mix all ingredients and then knead briefly.  Leave in covered bowl overnight.  In the morning, flatten dough onto a greased baking sheet.  Sprinkle sea salt, garlic salt & oregano over dough.
Bake @ 425 about 10 minutes.

These are delicious crackers and are wonderful served with hummus!  I’m sure you could add parmesan cheese to the dough to make a cheese cracker too.  :)

This Cross

This cross, Lord, it’s here again.
I thought I’d left it far behind.
The pain and all the heartache
They were memories in my mind.

Yet once again they grip my heart
The fears, the pain, the ache
I’m not ready to carry it again
But it’s here for me to take.

You were faithful through the first time
And I know right now you’re here.
Please send me grace and strength I need
And catch these streaming tears.

I’m not the only one with pain
Greater crosses others bear
So through these blinding tears
Help me see their needs with care.

Although my arms are tired

Abortion Survivor

         This past weekend I was blessed to be able to spend time with some friends (old and new!) who are all a part of the website Homeschool Alumni!  What a lovely time of fellowship we had!   Many thanks to the Miller family for hosting all of us :)

The weekend included many activities — we worked at a clothing distribution center,

went out to eat,

went snow tubing, played lots of games,

sang lots of songs and worshipped on Sunday together!

lately so I thought I would share the lyrics…

Pumpkin Cranberry Bread

1 C pumpkin
1/2 C raw sugar (or sucanate, honey, maple syrup etc.)
4 eggs
1/2 C milk  (or water)
1/4 C applesauce (or oil)
2 C flour
dash of salt
dash of ground cloves
dash of allspice
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp baking powder
3/4 C dried cranberries

Preheat oven to 350.  Grease your 9-5 inch loaf pan.
Mix pumpkin, sugar, eggs, milk and applesauce in a large bowl.  Add flour, baking powder, salt and spices. Add cranberries and mix just until moistened.  Pour into loaf pan and bake for 45 to 60 minutes.  Makes 1 loaf.

A fun variation of this recipe is to mix one package of cream cheese with a little bit of raw sugar (or honey, sucanate etc.).  After pouring half of pumpkin batter into loaf pan, spoon cream cheese mixture evenly on top of pumpkin, then layer the rest of the pumpkin mixture on top of the cream cheese.  It makes for a fun surprise when slicing the loaf!

I recently discovered this recipe when playing, I mean baking, on a day off  :)
I got a number of “this bread is so delicious” comments at church so I thought I would share it with you all. 
I think one of my favorites things is to don an apron and mess up the kitchen… and something delicious is sometimes discovered!  Isn’t it wonderful to be a woman??smgleanerbouguereau
