little-tait_bottom_bannerMy name is Tait Zimmerman Jr. and I am a little baby boy who, without the help of modern medicine, dedicated care and God’s hand, would not be alive today! I was born 3 months before I should have been and am miraculously doing well today. I spent the first three months of my life in the Neonatal Intensive Care Unit, cared for by some terrific doctors and nurses! Now my mommy and daddy have to get creative to pay the hospital, doctors and the whole team who took care of me. They have included a lot of information for you on this site about me, and our specific needs. Thank you for your considerationand support!

Millet Crackers

Millet Crackers

1 1/2 C millet
1/4 C flaxseeds
2-2 1/4 C whole wheat or spelt flour
2 tsp. baking powder
1/4 C melter butter
1 C water with 2 T white vinegar added

Mix all ingredients and then knead briefly.  Leave in covered bowl overnight.  In the morning, flatten dough onto a greased baking sheet.  Sprinkle sea salt, garlic salt & oregano over dough.
Bake @ 425 about 10 minutes.

These are delicious crackers and are wonderful served with hummus!  I’m sure you could add parmesan cheese to the dough to make a cheese cracker too.  :)

This Cross

This cross, Lord, it’s here again.
I thought I’d left it far behind.
The pain and all the heartache
They were memories in my mind.

Yet once again they grip my heart
The fears, the pain, the ache
I’m not ready to carry it again
But it’s here for me to take.

You were faithful through the first time
And I know right now you’re here.
Please send me grace and strength I need
And catch these streaming tears.

I’m not the only one with pain
Greater crosses others bear
So through these blinding tears
Help me see their needs with care.
